Instructions
  1. In a large bowl, beat 8 eggs. Add all vegetables and the soy sauce and stir to combine.
  2. Heat 1 teaspoon sesame oil in a skillet on medium heat and add about half a cup of the egg mixture to the pan (exact amount will vary). Cook each side until golden brown, flipping once or twice.
  3. Repeat with remaining sesame oil and egg mixture until batch is complete.

Instructions
  1. Place 2 tablespoons MCT oil in a large pan and cook onions and cabbage over- medium high heat just until tender.
  2. Remove from heat, drain excess liquid, and reserve.
  3. Whisk the eggs in a bowl and mix in soy sauce, spices, drained cabbage mixture, and bamboo shoots.
  4. Using a non-stick pan over medium-high heat, add 2 MCT oil and heat.
  5. Ladle about 4 ounces of the cabbage mixture into the hot pan, as you would for pancakes, and sprinkle the small shrimp evenly on top of each.
  6. Cook for about 3 minutes, or until edges start to brown and when jiggled, it slides in the pan.
  7. Flip and cook another 2 to 3 minutes until cooked through.
  8. Garnish with scallions.

Modifications
NOTE: Cook's Note: If Egg Foo Young becomes brown too quickly, finish it by baking in a preheated 350 degrees F oven for a few minutes.

Instructions
  1. Cut squash in half length wise scoop out seeds
  2. Put both sides face down on a regular plate with a tablespoon of water on the plate - microwave 15-20 min- when done shred with fork on a plate
  3. Heat skillet on med high with MCT oil (probably about 2 Tbsp)
  4. Chop up 1/4 cup of onions and any veg you want - I used frozen peas and sweet onion because that's what I had on hand (just keep in mind about carrot and condiment rule)
  5. Once skillet is hot add onions and vegetables and powdered ginger a bit of salt and garlic
  6. Stir and cook about 40 seconds
  7. Add squash and about 1/4 cup of soy sauce and 1 tbsp of rice vinegar or any vinegar

Modifications
Each half of squash makes a batch so just double ingredients for two batches.

A water-logged block of tofu won't absorb a marinade or get crispy in a frying pan. To drain it, slice the block and place the slices in a single layer on a paper towel-lined baking sheet. Top tofu with more paper towels and then a heavy object (a cast-iron skillet, cookbooks). Let sit at least one hour, preferably two. (Tip: If you know you want tofu for dinner, let it drain in the fridge during the day.) Once drained, you can marinate the tofu or start cooking it.

  1. Combine seasoning, splenda, soy sauce and water, set aside
  2. Heat MCT oil in skillet or wok over medium high heat until hot.
  3. Add chicken and saute until golden brown.
  4. Stir in seasoning mixture and bring to a boil.
  5. Reduce heat and simmer 2 minutes or until desired consistency.

Instructions
  1. Cut pork into strips. Combine in a medium bowl with soy sauce, xanthan gum, sesame oil, and red pepper flakes.
  2. Combine ginger and garlic in a small dish.
  3. Heat a nonstick large skillet over high heat. Remove from heat and spray with cooking spray.
  4. Cook pork mixture, stirring constantly, until pork is cooked through, about 2 minutes. Remove from skillet.
  5. Add MCT Oil and heat on medium for about 30 seconds. Cook ginger root mixture for 30 seconds.
  6. Add spinach and mushrooms. Cook until spinach is wilted.
  7. Add pork, vinegar and salt
  8. Cook for about 2 minutes until heated through.
