Ingredients
  

  • 2 1/4 cups Carbquick
  • 1 tsp Baking Soda
  • 1/4 tsp salt
  • 3/4 cup Butter Melted & slightly cooled
  • 3/4 cup Brown Sugar Substitute I used Swerve
  • 1/2 cup Stevia
  • 1 Large egg
  • 1 Large egg yolk
  • 2 tsp Pure Vanilla Extract
  • 1 1/4 cups sugar free chocolate chips I used Hersey's

Instructions
 

  • Preheat oven to 325 degrees
  • In large bowl, whisk together Carbquik, baking soda & salt.
  • In separate bowl, whisk together melted butter and both sugar substitutes until no brown sugar lumps remain. Whisk in egg plus egg yolk and then vanilla. Mix until well combined.
  • Mix wet ingredients into Carbquik mixture with wooden spoon or spatula. Dough will be softer than normal but thick. Stir in SF chocolate chips. Cover dough and place in refrigerator for 2 - 3 hrs or longer. Overnight is even better!
  • Remove cookie dough from refrigerator and let soften slightly at room temp, about 10 mins. Roll into balls, about 3 Tbps is size (I used a med ice cream/cookie scoop to portion dough) and place on baking sheets lined with parchment paper or silicone mats. Balls should be slightly taller than they are wide to prevent too much spreading.
  • Bake @ 325 degrees for about 12 mins. Remove from oven. Note: cookies may look slightly under baked. Let them cool on baking sheet for 10 mins. Then move to wire rack to cool completely.

Instructions
 

  • Heat waffle iron and spray with 0 calorie cooking spray. Mix together ingredients and cook. Makes 2 six inch waffles.
  • Top waffles with sugar free syrup, fat free Redi whip and butter spray

  • 2 tsp 100% MCT Oil
  • 1/2 Medium yellow onion, chopped
  • 1/2 Medium Green Peppers, diced
  • 6 oz 96% Cubed Ham
  • 2 Large egg
  • 2 oz Fat Free Shredded Cheddar Cheese

Instructions
 

  • Heat a large non-stick skillet over MED heat. Add MCT oil, then add onion and both bell peppers. Cook, stirring often, until tender, but still vibrant, about 3 minutes.
  • Add diced ham and cook a couple minutes. While ham is cooking add eggs to a mixing bowl and whisk until fully mixed.
  • Reduce heat to LOW and add eggs. Cook to desired consistency. Salt and pepper to taste.
  • Remove from heat, sprinkle with cheese and cover loosely with foil. Serve hot.

  • 1 can (15 oz) black beans, drained and rinsed CF
  • 1/2 medium onion, cut into wedges Condiment
  • 1/2 medium green bell pepper, cut into 1 1/2 inch pieces FC
  • 3 cloves garlic, peeled Condiment
  • 1 egg FP
  • 1 Tbs chili powder, or to taste Condiment
  • 1 Tbs cumin, or to taste Condiment
  • 1 tsp Thai chili hot sauce or regular hot sauce, or to taste Condiment
  • 1/2 cup Healthy Lite Whole Wheat Bread, dried and broken into crumbs FC
  • 4 slice Kroger or Sargento 40-50 calorie thin slice cheese, any variety Condiment
  • 4 rolls Sandwich Thins--Whole Wheat FC

Instructions
 

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet using MCT oil or a zero-calorie cooking spray.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  • In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  • Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  • If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side. If desired, melt a slice of cheese on top of each patty.
  • Place patties on buns and top with your favorite approved condiments. Serve with your favorite FC veggies, such as broccoli or cauliflower. Enjoy with a glass of Kroger Carbmaster Milk or your favorite Freebie beverage.
