Instructions
  1. Saute pepper and onion in 0 calorie cooking spray
  2. Combine eggs with Smartground crumbles and cook. Add in taco seasoning to taste.
  3. Combine egg/meat mixture with pepper/onions and add to tortilla shell
  4. Top mixture with cheese and salsa

Instructions
  1. Chop onions, celery, bell peppers, tomatoes and keep them all in separate bowls.
  2. In a large pot pour some MCT oil and saute the minced garlic and onions until brown.
  3. Add the chopped celery and saute add some water and then add the peppers.
  4. Pour some more water and the cover the pot, let it simmer for 5 minute or until the vegetables softens.
  5. Add the tomatoes, tofu and the Walden Farms Asian sauce, cover and let it simmer for 5-8 minutes or until all vegetables are soften.

Instructions
  1. Preheat oven to 375 degrees
  2. Spray tin pan with 0 calorie cooking spray
  3. Saute peppers and onions in MCT oil.
  4. Wisk together eggs, yogurt, seasoning, salt and pepper
  5. Distribute chopped peppers and onion evenly among muffin tins. (I used 1 TBSP of vegetables to each cup. I had enough for 11 cups).
  6. Divide the egg mixture among the tins
  7. Take the slice of the Swiss cheese divided in half and lay on each egg mixture
  8. Bake 12-15 minutes

Modifications
Be careful the cheese might bubble over pan. I had enough for 11 of the 12 cup tin.
