Instructions
  1. Brown ground beef and drain. Add in onions and sautee until soft.
  2. In the meantime, microwave pepper halves 2-3 minutes to soften slightly. (Prepared this way, the peppers should come out crisp-tender. If you want them crisper, you can omit this step.)
  3. Into beef mixture, stir in black beans, tomato, green chilies and their juices, cilantro, salt, pepper, garlic, and taco season.
  4. Divide filling among peppers. Top with about a tablespoon of mixed cheeses. Drizzle enchilada sauce over the top of peppers and pour remaining sauce into bottom of pan. Drizzle sauce from the pan over the top of the pepper when serving.

Modifications
Gluten and Dairy Free Notes: Be sure your enchilada sauce is gluten free. La Victoria brand makes a gluten free red sauce. If you're vegan or dairy free, just skip the cheese. It's more for garnish, and these are delicious with or without it. counts as a complete meal.
