Instructions
  1. Add chicken thighs to a slow cooker along with oil, garlic, thyme, onion, pepper, tomatoes, eggplant and salt and pepper.
  2. Pour Balsamic over all and cook on low for about 6 to 8 hours.

Instructions
  1. Sautee mushrooms and green beans in MCT oil
  2. Remove sauteed mushrooms and green beans
  3. Fry chicken in remaining MCT oil until cooked
  4. Remove chicken from pan
  5. Add Walden Farms Italian dressing, Balsamic vinegar and honey
  6. Add chicken, green beans and mushrooms into mixture
  7. Cook for a couple minutes
  8. Add grape tomatoe
  9. Place in dish and top with remaining sauce
