Instructions
  1. Preheat the oven to 350 F.
  2. Cut the bell peppers lengthwise, remove the seeds and stems.
  3. Lightly oil the bell peppers by tossing them in a bowl with MCT oil.
  4. Place the peppers on a baking sheet skin-side down. Roast in the oven for 8-10 minutes until the edges begin to show some color. Remove from the oven and allow to cool.
  5. In a medium bowl, mix together the cream cheese, cheddar, ham, paprika and scallions. Spoon a bit of the mixture into each pepper half
  6. Heat your oven to 400 F. Use a spoon (or a piping bag) to stuff the peppers liberally with the filling and place them back on the baking sheet.
  7. Bake the peppers into the oven for about 8 minutes or until peppers begin to soften
