Instructions
  1. Whisk the eggs and milk together and season them lightly with salt and pepper. Set aside.
  2. Heat the MCT oil over medium heat and add the peppers and cook until lightly browned, 2-3 minutes.
  3. Add the spinach and cook, stirring, until wilted. Remove to a plate.
  4. Put the remaining MCT oil in the pan, pour in the eggs and let them set for a few seconds.
  5. As you tilt the pan to fill the space with uncooked egg, pull the cooked egg away from the sides of the pan. Put the pan back on the stove and let the omelet set again, another minute or so.
  6. Sprinkle the surface of the omelet with the vegetables.
  7. Sprinkle the cheese on the mixture.
  8. Sprinkle the basil over the filling, and fold the omelet in half with a heatproof spatula
