Instructions
  1. Preheat oven to 350.
  2. Bring quinoa and water to a boil in saucepan over high heat. Reduce heat to medium-low and simmer until quinoa is tender and water is absorbed, about 15-20 minutes.
  3. Heat oil in skillet over medium heat. Saute onion until translucent. Add in garlic and cook for 1 minute more.
  4. In large mixing bowl, stir together all ingredients until well blended. Shape into a loaf on a foil-baking sheet or in a meatloaf baking dish.
  5. Bake 50 minutes until no longer pink. (Internal temp = 160). Let cool for 10 minutes and serve.
