Ingredients
- 1 6 oz butterflied pork chop
- 2 Tbsp Soy Sauce
- 1 tsp Xanthan Gum
- 1 tsp toasted sesame seed oil
- 1/4 tsp crushed red pepper flakes
- 1 Tbsp minced garlic
- 1 Tbsp + 1 tsp MCT Oil
- 8 cups fresh pre-sliced mushrooms
- 2 tsp Apple Cider Vinegar
- 1/4 tsp Stevia
- 0 calorie spray

Instructions
- Cut pork into strips. Combine in a medium bowl with soy sauce, xanthan gum, sesame oil, and red pepper flakes.
- Combine ginger and garlic in a small dish.
- Heat a nonstick large skillet over high heat. Remove from heat and spray with cooking spray.
- Cook pork mixture, stirring constantly, until pork is cooked through, about 2 minutes. Remove from skillet.
- Add MCT Oil and heat on medium for about 30 seconds. Cook ginger root mixture for 30 seconds.
- Add spinach and mushrooms. Cook until spinach is wilted.
- Add pork, vinegar and salt
- Cook for about 2 minutes until heated through.
